Sometimes accidents lead to great things, like Santiago's delicious Austin Margarita."Some friends and I were touring Texas searching for good Mexican food, and we ran out of our margarita base on our bus," says Rob Page, owner of Santiago's. "We had some ruby red grapefruit juice that we were drinking at breakfast, so we used that instead. We cut up fresh limes and mixed it with Casa Noble tequila. The Casa Noble has a vanilla note that blended beautifully with the grapefruit juice. We loved it, and it's become really popular at the restaurant."
Going against the grain comes naturally at Santiago's. They use a lemon-based mix instead of the more traditional lime, prepared fresh in-house.
